Vegetarian Chili (Slow cooker/crock pot)

Ingredients
2 medium onions, coarsely chopped3 garlic cloves, minced fine ¾ cup finely diced green peppers (see next)2 14.5oz cans diced tomatoes, or 1 quart home-canned tomatoes (I use Hunts diced tomatoes w/ pepper, celery & onion in place of diced green peppers)3 cans of beans of choice (I like 2 cans pinto 1 can kidney) (about 8.5 cups of beans cooked)1 can corn, drained8oz can tomato sauce¼ tsp beaumonde spice, optional1 tsp ground cumin½ tsp pepper1 tsp seasoned salt2 TBSP or more chili powder1 tsp dried basilI don't use the beaumonde spice, some people may like to add a tbsp brown sugar.For meat eaters, just add 1lb of browned, ground meat
Directions
Combine all ingredients in slow cooker, cover and cook on low 8-12 hours, or high 5-6 hours.

If you want, saute the onions in veg oil before adding the remaining ingredients.
