Ingredients
140 gr drained tuna, canned in water1tbls. lemon juice3 baby carrots, finely chopped1/2 cup spinach, finely chopped1 tbls. olive oil
Directions
Simply mix everything together, and blend well. Put the olive oil last in.

This tastes great as a snack or a side dish with a meal, but my favourite is spreading it on whole wheat bread with a slice of low-fat cheese on top. Yumm!

This should be about 8 servings.

Yummy, my kids loved it too. Me and my son were making the first batch and it was gone in minutes. So we had to make a second batch for the others. - 6/1/09

This was absolutely delicious, a nice change from the heavy, mayonnaise-ridden tuna salad I usually make. My family loved it so I'm sticking with this recipe for sure. - 5/27/11

It's great with a slice of tomato also or stuff it in a tomato. I've also tried it on a bed of greens. Thanks for the recipe! - 1/18/11
