Homemade Home Fries

Ingredients
Olive Oil (2tsp)Red Potatoes (2)Salt (dash)Pepper (dash)
Directions
Wash and dice the potatoes, leaving the skin on. Coat the bottom of a frying pan with olive oil and allow the pan to get hot. Put the potatoes in the frying pan and sprinkle with salt and pepper to taste. Flip the potatoes (flapjack style) until they're lightly browned. Transfer the potatoes to a paper napkin to blot off excess oil, eat, and enjoy :)

Optional: Microwave the diced potatoes for a few minutes to reduce cooking time.
