Lower Calorie Spanish Rice and Beef

Ingredients
1 lb extra lean ground beef1 medium onion, 2-1/2" diameter32 oz petite diced tomatoes1 cup brown long grain rice1 cup tap water1 packet taco seasoning mix (1.25 oz packet)1.5 tsp chili powder1 tsp oregano1/2 tsp garlic powder1/2 tsp ground cumin
Directions
Chop onion to desired size.
Place ground beef into dutch oven or pan to hold 6-cups.
Add onion to beef and brown.
Once browned, transfer beef and onion to strainer and rinse thoroughly with hot water to remove excess fat. Rinse pan out as well, wiping with a paper towel to remove as much fat as possible. Return beef and onion to pan.
Stir in remaining ingredients.
Bring to boil, reduce heat and cover.
Simmer for 50 minutes or until rice is tender.
Makes 6, 1-cup servings.
