Suzzaka bean sausage soup

2.5 cups dried beans cooked makes 7 cups1 cup chopped leeks1 cup chopped celery2 cloves chopped garlic1 cup chopped carrots1 28 oz can crushed tomatoes1 bay leaf6 cups water9oz of raw "hot" breakfast sausage 1cup potatoes, cooked and mashed1 tsp dried thymesalt and pepper to taste1 T olive oil
Start with 2.5 cup of dried beans that have been rinsed. Add 6 cups of water, bring to a boil for 3 minutes. Turn off heat, cover and let soak for 1 hour. Drain beans and add 6cups of hot water. Bring to a boil. Saute chopped veggies in olive oil and add to beans. Saute' sausage, drain, add tomatoes and put all ingredients into a large soup pot. Simmer for2 to 3 hours or until every thing is tender. Salt and pepper to taste. makes about ten 1.5 cup servings , each 261.1 calories.
