Italian Sausage Soup

Ingredients
1 LB Jennie-O Sweet Italian Turkey Sausage, casings removed1 Cup chopped Onion2 Cloves Garlic, minced1 1/2 Cups sliced Zucchini1 Cup shredded Carrots4-5 Leaves fresh basil finely chopped2 Cans diced tomatos with basil, garlic, and oregano (medium size-low sodium)1 small can of tomato sauce (low sodium)6 cups low sodium beef broth1 Tsp dried Oregano1 Pkg Whole Wheat Three Cheese Tortellini3 Tbsp Chopped Fresh Italian Parsley
Directions
In a 5 quart Dutch oven, sprayed with pam,
brown sausage. Remove sausage and drain, reserving 1 tablespoon of the drippings.

Saute onions and garlic in drippings. Stir in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes.

Stir in zucchini and parsley. Simmer covered for 30 minutes. Add tortellini during the last 10 minutes.

Makes about 8 servings. Very filling soup! Great for cold winter nights...enjoy!!!
