Easy Chicken Empanadas

Empanada Discos 10 pack (color or white), 5" (Try Goya or Rico)1 Chicken Breast, skinless, boneless, About 8oz, Diced2 tsp minced Garlic1/2 cup chopped Onion1 tbsp Sofrito Sauce1/4 tsp pepper1/4 tsp salt1 package of accent Sazon seasoningOlive oil cooking spraySkillet & Baking Sheet
Spray skillet; add diced chicken, garlic, onion, sofrito and all seasoning. Add a 2 tbsp of water for a juicier sauce. Once meat is cooked, lay out empanada disc and evenly fill with meat mixture. Fold each stuffed empanada in half and place of baking sheet coated with cooking spray. Spray tops of empanadas with cooking spray. Bake at 375 degrees for about 15-18 minutes until browned. Serve warm, top with salsa if desired. Calorie calculations are for 1 empanada, makes 10 servings. Remember if you eat two to double the calorie count, enjoy.
