Number of Servings: 12

Ingredients

    - 1/2 an onion, finely chopped
    - 3 cloves of garlic, minced fine
    - 1 tbsp salted butter
    - 2 tbsp sherry vinegar
    - 10 slices of thick bacon
    - 3 tbsp all purpose flour
    - 1 cup lowfat milk
    - 2-3 oz of Manchego cheese or sharp white cheddar, shredded
    - 1 cup of bread crumbs
    - 2 fresh, large eggs
    - 1 cup olive oil

Directions

Makes 12 servings

1. Cook bacon until fully cooked, not extra crispy but a bit flimsy, set aside.

2. In a large skillet, melt butter and mix sherry vinegar with it. Add onions and garlic and cook until transluscent.

3. Add flour and stir until mixed thoroughly. Add milk and simmer for a couple minutes. Take off heat and let cool for 30 minutes.

4. Add cheese and bacon to the mixture. Place in shallow dish and refridgerate for minimum of 30 minutes, for best results refridgerate over night.

5. Take mixture out of frig, then take a scoop and make into a cylinder. Dunk into egg and then bread crumbs.

6. Fry the cylinders in olive oil in a deep skillet for about 2 minutes on each side.

7. Serve hot, right away.
