Low-fat Macaroni & Cheese

2 c. elbow macaroni1 1/2 c. cottage cheese1/4 c. margarine1/4 c. Flour1/2 t. salt1/4 t. white pepper1/4 t. garlic powder2 c. milk, nonfat2 c. Kraft fat-free shredded cheddar cheese
Cook macaroni according to package directions. While macaroni is cooking, place the cottage cheese in a food processor and process until smooth. Set aside.
In a large saucepan, melt the margarine. Stir in the flour, salt, pepper and garlic. Stir until smooth. Gradually add the milk and bring to a boil. Cook and stir for two minutes or until thick.
Drain the macaroni and transfer to a large bowl. Add the cheeses and the white sauce. Add broccoli or other veggies if desired. Pour into a 13x9x2 baking dish sprayed with non-stick cooking spray. Bake, uncovered, at 350 degrees for 25 minutes or until bubbly.
Makes six servings.
