Tomato Chicken Casserole

Ingredients
Chicken Breast, no skin, 500 grams CubedOlive Oil, 1 tbsp Onions, raw, 1 large slicedMushrooms, fresh, 0.5 cup, pieces or slices2 tblsp plain flour2 tsp cumin1 1/2 cups of Beef Broth2 Zuchini's sliced1 carrot slicedCanned Tomatoes, 600 grams 2tblsp tomato pasteParsley, 2 tbsp
Directions
Heat half oil in large saucepan cook chicken till browned, transfer to plate with any juices.
heat remaining oil add onion, cook til soft. add cumin cook for 30 seconds or till fragrant.
add garlic, mushrooms and cook for a further 2 minutes. reduce heat sprinle on flour, stir to combine and cook for another 2 minutes.
return the meat and juice to pan with zuchini, carrot, tomatoes , broth and tomato paste. stir mixture till it boils, reduce heat and simmer for 5 minutes.
stir in chopped parsley and season with salt & pepper.

Nice served with rice.
