Vegan-Uncle Jack's Carrot Salad

Ingredients
1.25 cups of shredded carrots or the 10 oz package of shoe string carrotshalf a cup of chopped scallions/green onion6 tsp of minced garlic2 tbsp of olive oil2 tbsp of apple cider vinager1 tbsp of unsalted sunflower seeds
Directions
Combine all ingredients.

Stir/shake well to distribute oil and vinager.

Add more or less of any of the ingredients to your desired taste.

This is delicious if you make it an hour or so ahead of time so the flavors can marry.

Put in refrigerator until ready to eat for a nice cool salad.
