Homemade Baked Macaroni and Cheese

8 cups elbow macaroni2 tbsp butter or margarine2 tbsp flour4 cups milk (any milk is fine, the less fat the lower the calories- I use 2%)8 ounces cheddar cheese- shreddedsalt for the pasta water1 tsp salt for the recipepepper, to tastecooking spray or maragine for the baking pan
Preheat oven to 350 degrees.
Boil macaroni in 8 cups of salted water- only until "al-dente". While macaroni is cooking, melt butter in a sauce pan, add flour to make a tick paste. Add milk and cook over med-low heat stirring frequently. When sauce thickens add salt, pepper, and grated cheddar cheese. Stir until cheese melts in. Spray a 9 x9 pan or a pan of your choice with cooking spray or lightly spread with margarine. Drain macaroni and add to pan, pour cheese sauce over and stir to combine. Bake for 30 minutes.
