Quinotto with Tofu

1 tbsp olive oil1 medium onion1/2 c quinoa1/2 c dry red and yellow lentils1 c tomato sauce1 c frozen peas2 c vegetable broth1 tsp each dried herbs: thyme, sage, rosemary, oregano, whatever you have150g marinated tofu
Sautee the onion until golden. Throw in lentils and quinoa and toast for 2-3 minutes. Add peas and mix quickly. Add tomato sauce, vegetable broth, spices and chili powder. Bring to a boil, reduce heat to minimum, cover and cook for about 20 minutes. Uncover, check doneness of quinoa and lentils, add tofu, stir to evaporate excess of water until it's thick enough to resemble risotto, creamy but not soupy.
