Spinach Turkey Loaf

Ingredients
1 medium onion, chopped2 cloves garlic, minced2 eggs, beaten1 package ground turkeysalt and pepper to taste10 oz. frozen chopped spinach, thawed and squeezed dry in a towel1/2 cup feta cheese crumbles2 teaspoons dried oregano1 cup cooked quinoa1/4 cup chicken brothdrizzle of extra virgin olive oil1/4 cup pesto (for the top)
Directions
Preheat oven to 375 degrees.

Combine all ingredients except pesto. Spread turkey mixture into a greased loaf pan. Top with pesto.

Bake one hour. Let rest 10 minutes before serving.
