Cucumber, Spinach, Tomato salad with mint yogurt dressing

Ingredients
dressing:8 oz low fat plain yogurt2 Tbsp dried spearmint1 Tbsp honey -----1 medium cucumber, peeled and cubed4 italian/ plum tomatoes, peeled, diced2 cups fresh spinach, shredded
Directions
Mix yogurt, spearmint, honey in small bowl. Set aside.

Salt cucumber and place in sieve and allow to weep/drain while preparing the rest of the vegetable. Toss spinach, tomatoes and dried cucumbers in bowl. Add dressing and toss. Serve immediately.
