Another Chickpea-Quinoa Salad

Dry quinoa, 1 cupChickpeas, 1 can drained and rinsedRed bell pepper, 1 medium, dicedOlive Oil, 1 tbspSun Dried Tomatoes, 2 pieces. very finely dicedLemon juice, 2 tbspbalsamic vinegar, 1 tablespoonDijon or stone ground mustard, 1 tbspParsley, .5 cup mincedGarlic, 2 cloves minced or pressedScallions, 5 sliced whites and half of greens
Simmer quinoa in 1 1/3 cups boiling water with pot top on until water is absorbed (10-12 minutes).
Mix together garlic and all wet ingredients in a small bowl.
Put everything else (including cooked quinoa) in a big bowl. Pour wet ingredients over, and stir to mix. Add extra lemon juice, balsamic, salt, and pepper to taste.
Makes 6 servings as a lunch, more as a side
