Spanish Rice with Chicken

Ingredients
Brown Minute RiceChicken Breast - cut into 1 inch chunksDiced Tomatoes (with chilies if desired) - 2 cansBlack Beans - 1 canSliced Black Olives - 1 small canShredded Pepperjack Cheese
Directions
Prepare minute rice while cooking chicken in large wok-type pan (with high sides) with cooking spray. Add cooked rice, tomatoes, black beans, black olives and any spices and bring to a boil. Add cheese and stir until melted.

Makes 6 good size servings! Pair with a salad for a well rounded meal.
