1 cup chopped onions1 cup chopped celery1 cup fresh mushroom pieces3 tbsps olive oil2 cups chopped carrots5 oz frozen spinach2 chicken breasts, cooked and cut up4 cups chicken broth16 oz (3 servings) potato gnocchiBlack pepper to taste
Cook onions, celery, and mushrooms in olive oil until onions are translucent. Add the carrots, spinach, and chicken. Stir in the chicken broth and cook until carrots soften. Add the gnocchi and boil for a couple of minutes until gnocchi are done. Add pepper to taste.
