Apple Empanada

Pastry:2 c whole wheat flour1 t salt1 c shortening6-7 T water1 egg, beatenFilling:2 large apples, peeled and diced1/2 c apple cider1/2 c sugar1/2 t cinnamon1 T cornstarch
Mix flour and salt, cut in shortening until crumbly. Stir in water until completely moistened.
Divide dough into 2 equal portions. Roll dough until 1/8" thick. Cut into 4" circles.
In a medium saucepan, simmer diced apples, cider, sugar, and cinnamon. In a small bowl, mix cornstarch with enough water to form a thin consistency; stir into apple mixture and cook until thickened.
Brush pastry circles with beaten egg. Place small spoonful of apple mixture in center of each circle. Fold pastry over to form a half circle. Press edges together with a form to seal.
Bake at 375F for 15-20 minutes
