Ganache with a Tex-mex flair. This isn't a light recipe, but sometimes you simply have to indulge that chocolate craving. This chocolate confection is fantastic with graham crackers, cookies, ice cream, dipping fruit, as a cake frosting or just straight off the spoon. Ganache with a Tex-mex flair. Ingredients

16 oz dark chocolate chips
1 cup heavy whipping cream
1 tbsp ground cinnamon
1 tsp ground cayenne
1 tsp pure vanilla extract
Directions
Place the chocolate and spices in the bowl of a stand mixer and set aside. **This bowl should be heat proof, like that of a KitchenAid mixer. If your stand mixer has a plastic bowl, you should blend the ingredients by hand on the last step.
In a sauce pan, bring the cream to a boil, stirring occasionally with a wooden spoon to prevent the bottom from burning. Once the cream begins to boil, immediately remove it from the heat and pour over the chocolate.
With the whisk attachment, blend the cream, chocolate and spices till smooth. Stir in the vanilla.
YUM!
To make this recipe lighter, use half and half instead of whipping cream.
