Deluxe Breakfast Burrito

Ingredients
3 large eggs3 egg whites2 light string cheese, finely grated (or save time and use 1 cup low-fat grated mozzarella)2 cups fresh asparagus, diced (approx 1" pieces)6 Whole Wheat tortillas1 Tbsp Extra Light Olive Oil*lemon pepper, chili pepper to taste
Directions
-In a large non-stick frying pan, add olive oil and asparagus. Saute over medium heat until tender, seasoning with lemon pepper to taste.
-In a bowl, whisk eggs, egg whites, and grated cheese together.
-Once asparagus are tender, pour egg mixture into pan and cook over medium heat, stirring well.
-Add chorizo to a SEPARATE nonstick frying pan and cook over medium heat.
-Pour off excess grease from chorizo before adding to asparagus/egg mix. Add chili powder to taste.

-Yields six servings of approx. 1 cup filling each.
