Ingredients
Directions
1/2 cup cottage cheese1/2 cup quaker regular oats3 egg whites1 whole egg3 spenda packets (four if you like sweets)1 tsp vanilla1/2 tsp cinnamon
Add all the ingredients in a blender and pulse a few times to blend it all together well and smooth out the cottage cheese.
pour on hot griddle coated with a cooking spray. Flip once.
**This usually makes about 10 pancakes that are about 4 inches. I eat it as two meals but it is under 400 calories for the whole batch. I sell real estate so I am in my car alot and these are perfect for me to take the second serving on the go for a mid day pick me up. Sometimes I add walnuts or mashed banana to the blender. There are so many ways to do this, adapt it to fit your tastes.
