Ground Beef and Potato Casserole

1 lb 93% lean ground beef1 cup chopped onions1 10.75 oz can Campbell's Healthy Request Cream of Mushroom Soup1/4 cup water mixed with soup1/4 tsp salt(optional) 1/4 tsp black pepper3-4 medium potatoes, thinly sliced with skin on
Brown ground beef and onions, drain.
Spray the bottom of a 2 qt glass baking dish(11x9 inch). Cover the bottom of the dish with a layer of potatoes and a layer of ground beef. Pour half of soup mixture over this. Add another layer of potatoes and ground beef, pour remaining soup mixture over this also. Bake covered for 1 hour at 350°F.

This is really great. I made two changes. First, I added just an bit more water to the soup. Then on the last layer, I mixed the meat and onion with the mushroom soup before pouring over the potatoes. Made assembly easier. My family thought it was delicious. - 7/19/09

I had to modify a bit for time - I cubed my potatoes and nuked them, added to the beef and soup mix and stirred together - finished cooking on stovetop. Did whole thing in cast iron skillet. Foil over it at the end. Edges got crispy.

Me & my boyrfriend (who isn't tryin to eat healthy) both loved it. Some of the potatoes were a little undercooked..will prob slice the slices in half next time. For seasonings I added pepper, italian seasoning, parsley, onion powder (because I didn't add real onions), & garlic. I added corn too. YUM - 5/26/10

I've made this for years and I use turkey burger in place of ground beef. I also add green beans between layers and fat free or low fat monteray jack cheese on top. My family loves this! I read someones comment about adding corn and I am going to try it that way next time I make it. - 1/18/11

I increased the water to about 1/2 cup, added some extra spices that I like, and a clove of garlic. I also experimented with the recipe by using egglplant in half of the mixture instead of potatoes. Using eggplant instead of or in addition to potatoes is a very good variation! Super easy, thanks! - 9/4/11

Delicious,easy recipe. I added some thinly sliced carrots to the ground beef mixture and subsituted cream of chicken soup.I ended up making three layers because my potatoes were large so I had to add more water to the soup and i cooked it for an extra 30 mins. I made this tonight and it was wonderful and easy! I did add salt and pepper, plus a little red pepper and garlic. I also did not have any onions so I added chopped dry onion to the ground beef. I used two cans of mushroom soup also. It was wonderful and my 6 year old gobbled it up. - 1/13/10

It was pretty good - I added about 4 cloves of garlic to the onion and meat. And also substituted half the ground beef for an equal amount of breakfast sausage. Yum. Threw in some mushrooms and frozen corn, used cream of chicken soup, and added paprika to the soup. My hubby and I both enjoyed it! - 12/2/10
