Oklahoma CaviarServes: 61 large tomato, chopped1/2 cup green onions, chopped1 teaspoon jalapeno, chopped fine1 can low sodium black eyes peas, drained and rinsed1 can white hominy, drianed1/2 cup light Italian dressingDirections:Place all ingredients into a large bowl and mix well.Refrigerate and serve.Note: This is great as a side dish or served as an appetizer with fresh cut veggies.
