Breakfast Cups - Canadian Bacon and Veggies

-3 large eggs-2 eggs - egg beater style-Onions, peppers, mushrooms (or a little southwestern blend frozen veggies)-3 pieces canadian bacon-Any spices you may like (salt, pepper, Emerils Original, etc)-A little reduced fat cheese for the top (I used 1/4 cup total for the nutrition info)
Cook veggies and bacon in skillet , when done set aside to cool a little
Line muffin pan with 6 paper cups
Mix eggs, egg beaters, and spices in with veggie/bacon mixture
Fill muffin cups with mixture
Sprinkle a little cheese on top
Put in oven for ~20 min at 350F until eggs are set
