One zucchini - approx 20 cm longA small bowl full of parmesan cheese for dipping1 large egg, beatenOlive oil
Slice the zucchini, about 3mm thick.
Dip slices into beaten egg, then into parmesan cheese.
Fry slices in warm olive oil - I used a normal frying pan - as long as you don't heat the oil too high, there shouldn't be any spitting. You want the zucchini to heat through while you brown and crisp the cheese.
Drain on paper towel, and serve warm.
