Braised Chicken Thighs with Potatoes and Green Beans

Ingredients
4 skinless chicken thighs1 tsp olive oil1/2 large onion, sliced2 red potatoes, in large chunks1 rib celery, in thick slices2 tsp fresh thyme, or 1 tsp dried1 bay leaf1 cup chicken broth2 cups frozen or steamed green beans
Directions
In a large skillet saute the onion in the oil until soft. Add the rest of the ingredients except the beans, bring to a boil. Reduce heat to a simmer, cover, and cook for about 30 minutes, until chicken and potatoes are done. Add the green beans and heat through. Serves 2.
