Ingredients
Fresh eggplantBread crumbs Tomato sauceItalian seasoningShredded mozzarella and/or Parmesan cheese
Directions
Wash and slice eggplant into rounds about 1 inch thick.
In crock pot, layer eggplant, bread crumbs, tomato sauce, Italian seasoning, and cheese.

Cook on Low 6-8 hours.
