4 oz. cleaned, poached shrimp1/2 slice dry bread, made into crumbs2 tsp. finely minced parsley2 tsp. finely minced garlic1-1/2 tsp. olive oil1/2 small clove garlic, mashedSalt and pepperCayenne pepperLemon wedge
Makes one individual serving
Arrange shrimp in an individual shallow flameproof casserole. Combine remaining ingredients (except lemon wedge) in a small bowl and mix well. Add a few drops water or clam juice to moisten, and pile some of the mixture around and on each shrimp, covering them thoroughly. Broil at a moderate heat just long enough to brown crumbs. Serve hot with lemon wedges.
