Cannellini beans with Tomatoes & Ham

1 15.5 oz can cannellini beans, drained1 14.5 oz can diced tomatoes in juice, drained but reserve 2 Tbsp juice1/2 cup diced extra lean ham (ham steak works well)1/2 cup diced sweet onion1 Tbsp EVOO2 cloves garlic, minced1 tsp sage, chopped if fresh or 1/2 tsp dried sage1/2 tsp Black Pepper1/2 tsp red pepper flakes (optional)3 Tbsp Parmesan cheese, fresh grated (optional)
Dice the ham and onions. Drain the beans and the tomatoes, being sure to reserve 2 Tbsp liquid from the tomatoes.
Preheat a deep skillet and add 1 Tbsp olive oil. Add the ham and onions, and sautee on medium heat. Add the garlic and stir well, sauteeing over medium heat unitl onions are translucent.
After onions are translucent, add beans, tomatoes and reserved juice, mix well. Add pepper, sage, and mix well. Allow mixture to simmer for 10 minutes, stirring occasionally, unitl liquid thickens.
Add red pepper and/or parmesan cheese just before serving, being sure to mix well.
Makes 4 1/2 cup servings
