Easy Vegan Lentil Soup

Ingredients
10 cups water2 cups uncooked lentils1 large onion, diced4 cloves garlic, mincedlarge can of diced tomatoes, drain off about half the liquid
Directions
Put the water and lentils into a stock pot, bring to a boil, then reduce heat and simmer, covered, for 2 hours. Add more water if necessary, but usually 10 cups does it for me. In a skillet, saute the onion and garlic in a little nonstick cooking spray. Add to cooked lentils, along with tomatoes. Simmer for another hour.

Season with salt and pepper, if desired.
