4 C Long Grain Rice, cooked2 Farmers, Mennonite or Chorizo sausage,or simular1 large chicken breast, diced 6 ounces cooked shrimp, defrosted6 ounces sirloin steak, or left over roast beef2 large eggs, scrambled1 C diced onion1 C frozen peas, defrosted6 tsp minced garlic or 6 cloves1 tbsp olive oil for frying or less if you use pan spray6 Tbsp Ketjap Manis (Sweet Soy Sauce)2 Tbsp Sambal Oolek (Chili sauce, non additives) or to taste.
Makes 8 2-cup servings
Find a large bowl and place it on the counter. All of the ingredients will be added to that, tossed together and served.
Steam or boil the rice until cooked and place in bowl.
While the rice is cooking, get out your non-stick pan and get to work.
Slice the farmers sausage into rounds and fry in non-stick pan, add to bowl.
Dice chicken breast, cook in non-stick pan until thoroughly cooked and add to bowl, or cheat and use previously cooked chicken, diced and warmed through and add to bowl.
Thinly slice beef,a small boneless steak or use some left over roast, saute and add to bowl. Defrost 6 ounces of frozen shrimp in the microwave and add to the bowl.
Crack 2 large eggs into a bowl, beat well, cooked scrambled egg, dice once cooked and add to bowl.
Heat a small amount of oil in to pan, add diced onion, garlic and saute until translucent. Add Sweet Soy Sauce or Ketjap Manis, and Sambal Oolek also known as chili sauce stir well and add to bowl. You can change the amount of heat in the dish with the portion of sambal oolek. This seems to be a good bite, but try and see what you like for taste.
Add defrosted peas to bowl, Top with hot steamed rice, toss together until well mixed and serve.
