Nancy's Lentil Soup

3 strips of bacon6 diced baby carrots4 T. chopped onions4 T. chopped celery1 chicken bouillon cube4 C. water + 1 C. water12 oz. dried lentils1 T. dried parsley1 t. salt1/4 t. pepper1/4 t. thyme1 bay leaf1 14.5 oz can of diced tomatoes
Cook bacon in dutch oven, remove and place on paper towels to drain. In remaining bacon grease, add carrots, onions, celery, and garlic and saute until veggies are tender. Stir in bacon, 4 C. water, lentils, bouillon cube, parsley, salt, pepper, thyme, and bay leaf. Heat to boiling. Cover and reduce heat and simmer until soup thickens, about 1 hour. Stir in tomatoes with liquid and 1 C. water. Simmer uncovered for 15 minutes. Makes 6 - 1.5 C. servings.
