Ratatouille

Ingredients
1 cup sliced onion8 oz sliced fresh mushrooms2 cup sliced zucchini2 cup french sliced green beans2 cup sliced summer squash2 stalks, chopped celery1 pound cooked ground pork4 cups turkey broth1 clove minced garlic2 bay leaves1 teaspoon basil leaves1 Cup cooked brown rice1 Tablespoon olive oil8 oz bag of fresh spinach
Directions
1. Heat olive oil in large Dutch oven, add onions, and stir until they are translucent. Add remaining vegetables except spinach, and stir over high heat until they are tender crisp.

2. Add turkey broth, rice and seasonings. Heat to boiling point.

3. Reduce heat and simmer for 30 minutes, adding more liquid if necessary. Add spinach in last 10 minutes.

Makes 8 - 2 cup servings
