Star's Pork Risotto

Ingredients
4 lbs pork boneless loin4 tsp veg oil3 cups broccoli 2 med red bell peppers chopped1 tsp salt1 med onion chopped2 tbsp butter blend2 cups uncooked rice1/2 cup white wine2 cups beef broth2 1/2 cups water1/4 cup milk 4 tbsp grated parmesan cheese4 cloves garlic minced
Directions
cut pork into slices. Heat oil in skillet over medium heat. Cook pork, broccoli, bell pepper, garlic, and salt in oil about 5 minutes, stirring, until pork is done. Remove from skillet, keep warm.

Cook onion in butter in same skillet about 3 minutes until tender. Stir in rice and wine. Cook about 30 seconds, stirring until wine is absorbed. Stir in broth and water. Heat to boiling, reduce heat. Cover and cook about 15 minutes or until rice is almost tender and mixture is creamy. Stir in milk and pork mixture, heat through. Sprinkle with cheese.
