2 egg whites1 whole egg1 slice Canadian BaconHand full of sliced mushroomsTbsp white onion chopped3 cherry tomatoes cut into circles3 Yellow Bell pepper strips/diced1 slice whole wheat toastAround 10 Blueberries1 cup V8 low sodium
Pour 6oz. olive oil into skillet. Heat around low-med to med. Add Veggies and ham once oil is hot. Beat two egg whites together with the one whole egg. Take veggies and ham and place on plate. Add eggs to skillet(remove oil & add non-stick pam) cook till needed add veggies and ham and place cheese on top. Fold to melt cheese still on skillet.
Take berries and add one tbsp of splenda. Mash berries with a spoon. Add mashed berries to toast.
Pour V8 and enjoy!
