vegetable soup

Ingredients
1/2 to 3/4 T olive oil1 small chopped onion2 stalks chopped celery1 medium potato -peeled and diced2 cloves garlic - minced4 c. chicken broth
Directions
makes four servings
Heat oil....add celery and onion - cook and stir until very tender.....but not brown
Add dash of salt
Add potatoes, garlic. and herbs
Stir together....add chicken broth....cover and simmer for 30 minutes.
Puree
Heat through
Season with pepper
