Chicago Diner Spinach & Artichoke Dip

Ingredients
15 oz. can of artichokes in water, drained and rinsed1/2 cup veganaise1 tablespoon chopped, fresh dill1 clove garlic, minced1/2 pound spinach, cooked and choppedsalt and pepper to taste
Directions
Place the artichokes in a food processor, and blend until semi-smooth.
Transfer to a bowl, and fold in the mayonnaise, chopped fresh dill, garlic, spinach, and salt and pepper to taste.

    This sounds fabulous. I know I will have to substitute for real mayo since we have food sensitivities in our house but I believe my kids will actually like this. I'll let you know what I think. - 6/8/11
