Basic Crepes

Ingredients
2 eggs1 cup milk2/3 cup all-purpose flour1 pinch salt1 1/2 tsp vegetable oil

This isn't actually my recipe - it's by a lady named Erin Nesbit, and this is one of the most basic, not as fatty recipes I've found for crepes.

1. In a blender, combine eggs, milk, flour, salt and oil. Process until smooth. Cover and refrigerate 1 hour.

2. Heat a skillet over medium-high heat and brush with oil. Pour 1/4 cup of crepe batter into pan, tilting to completely coat surface. Cook 2-5 min, turning once until golden. Repeat with remaining batter.
