Balsamic-Mustard Marinated Tofu

Ingredients

1 block firm or extra firm tofu, drained, pressed and cut into 1/2" cubes3 tbsp balsamic vinegar2 tsp yellow mustard3 cloves garlic, minced1/4 tsp paprika1/4 tsp ground black pepper, or to tastea pinch of cayenne pepper, or to taste
Mix all ingredients, except tofu, until thoroughly blended in a large container with a lid. Take the drained, pressed tofu cubes and add them to the marinade. Put the lid on the container and shake gently until the tofu is covered. Let marinate for at least 10 minutes and up to overnight, shaking occasionally to recoat the tofu.
Preheat an oven to 450 degrees F. Spray a baking sheet with cooking spray. Pour marinaded tofu out onto the baking sheet, reserving and discarding any remaining marinade, and spread out making sure there is space between all the pieces. Lightly spray the top of the tofu with additional cooking spray. Place in the oven on the middle rack and bake for 25-35 minutes, or until the edges are starting to brown and the marinade has begun to caramelize.
Serves 2-4, depending on desired serving size (we usually make it into 2 meals here).

I'm relatively new to cooking with tofu and started with this recipe since I had all of the ingredients already. I followed the recipe diligently and it did not taste good at all. You have to be careful to not leave any marinade on the baking dish, as it will burn in the oven. Do not recommend! - 8/7/11

This was my very first time ever cooking with tofu, and thanks to your recipe it tasted amazing!! This is a recipe I will make again and again! I made two substitutions, I used white wine vinegar (didn't have balsamic) and Chinese Hot Mustard instead of yellow (just personal preference). Thank you!! - 4/17/11
