Roasted Zucchini

1 lb. small zucchini2 T. olive oil1 t. jarred minced garlic1 t. dried Italian seasoning1/2 t. dried crushed red pepper1/2 t. salt
Preheat oven to 450. Cut zucchini lengthwise into quarters; cut each piece in half crosswise. Toss zucchini with oil and remaining 4 ingredients; arrange zucchini in a single layer on a baking sheet. Bake 15 minutes or until golden brown and tender, returning once after 7 minutes.
