Panko Crusted Tenderloin

1.5 pound pork tenderloin1 cup Iron Chef garlic panko crumbs (or your favorite)1/2 cup egg beaters egg substitute1/4 cup floursalt pepperPam
Preheat oven to 425 degrees and spray baking sheet with Pam. In three separate bowls put the the flour seasoned with salt and pepper, the eggs substitute and the panko bread crumbs. Cut the pork tenderloin into 1/2 inch slices.
Coat one piece of pork in the flour, then dip the floured pork into the eggs, then coat the pork in the panko bread crumbs and then place on baking sheet. Do this for all the pork slices. Spray the pork with Pam and place in oven. After 13 minutes remove baking sheet and turn over pork slices. Cook for another 8 minutes and then turn the oven on high broil for about 3-5 minutes until crust has slightly browned.
Serves 4 six ounce portions.
