Split Pea Soup with Chicken Broth

16 oz bag Split Peas1 cup Carrots, raw, shredded1 tbsp Garlic powder12 cups Water 2 cubes Chicken Broth
Place peas in 12 cups water, in a large pot, bring to a boil, covered. Turn stove off and let set (covered) for one hour. Shred carrots in food processor, add to peas; add 2 cubes of Chicken Broth to soup and 1 T. Garlic Powder. Bring to a boil, uncovered, stirring regularly. Reduce heat to lowest setting and let simmer 1-2 hours as needed, until peas and carrots are soft.
Alternatives: For Vegan, use vegetable broth. Add meat (turkey thigh or ham bone). Soup can be strained for smoother texture. However, the fiber is, of course, quite good for you!
