Vanilla No-Bake Cookie w/ Splenda

Ingredients
1 cup granulated sugar1 cup Splenda - yellow bag1 stick or 1/2 cup margarine1/2 cup lowfat milk1/2 t. salt1 cup peanut butter1 t. vanilla3-3 1/2 cups oats
Directions
Combine sugars, milk, margarine and salt in heavy saucepan. Stir and heat to boiling point. Boil for 1 minute.
Remove from heat and add peanut butter. Stir until smooth. Add vanilla extract.
Add oats a little at a time until incorporated(Cookies will set up as they cool.) Portion about 2 tablespoonfuls onto waxed or parchment paper. Allow to cool. For a diabetic exchange you'll want to portion about 1 1/2 T.
