The Single Person's Mexican Rice

Ingredients
2 Tbsp of olive oilI 6oz. can of tomato paste1 cup of white rice1 1/2 cups of water1/4 cup chopped yellow onion1/4 cup frozen cornSeasonings to taste (i.e, paprika, cumin, cilantro)
Directions
Heat oil in a large skillet on medium-high heat and cook the onion until tender. Add rice and cook until it has browns. Once the rice has browned had tomato paste, water, and seasonings. Bring to a boil and stir in corn. Reduce heat to low and cover for 5 minutes or until the rice is tender.
Makes 4 1/4-cup servings
