Pina Colada Muffins

Ingredients
2.25 cups whole wheat flour2.25 cups white flour4 tsp. baking soda2 tsp. cinnamon1 tsp. salt3/4 cup honey6 large eggs1/2 cup oil1tsp. vanilla1 can diced or crushed pineapple1 cup unsweetened shredded coconut
Directions
Mix dry ingredients together than add wet. Slice bananas instead of mashing them. Make sure you get unsweetened coconut. Use scraper to mix just slightly, until moistened. Use scoop to put in muffin holders. Bake in 375 degrees for 25 minutes. Makes 24 normal size muffins or 12-15 giant muffins.
