turkey veggie scramble

Ingredients
ground turkey, Jennie-O extra lean, 4 oz.olive oil, extra virgin, 1 TBSPegg beaters, 1 cup, originalbroccoli, 1/2 cup choppedcarrots, 1/2 cup choppedcheese sticks, mozzarella light, 2garlic salt or other seasoning (optional)
Directions
Brown turkey in olive oil in medium skillet.

Add garlic salt or other seasonings if desired.

While that's cooking, add a little water to vegetables and microwave until tender (2-3 minutes).

In small mixing bowl, combine egg beaters, veggies, cheese sticks (chopped or sliced), and turkey (after it's cooked).

Mix all ingredients and return to skillet. (There should be a little olive oil left in skillet-- if it's not enough to keep eggs from sticking, add your favorite no-cal cooking spray.)

Scramble over low-to-medium heat until desired firmness is reached.
