Dublin Coddle

Ingredients
1lb breakfast sausage1lb canadian bacon8 med. potato1 med onion1 quart water or stocksalt and pepper to taste
Directions
Slice sausage and bacon in 1" chunks. Add to water and boil 6 minutes. Drain and keep water. Slice potato thick and slice onions. In casserole dish, layer potatoes, onion, sausage, onion potatoes. Pour water back over. Cover with parchment paper and cook in over at 250 degrees one hour.

    This was just wonderful. I substituted Irish rashers(bacon) for Canadian. I also added 2 med. onions chopped. This was as good as any my dear Mother made when we lived in Dublin. - 3/19/10
