Jenny's black bean soup

Ingredients
2 cups water2 cups cooked black beans (drain and rinse if using canned)1 cup grated raw carrot3 ripe medium tomatoes, diced, with seeds and juice1 bouillion cube1/2 tsp cumin1/4 tsp pepper
Directions
Add all ingredients to a pot and heat until boiling (about ten minutes) on medium heat. Simmer for another 30 minutes.

Makes 3 one-cup servings, or about 4 three-quarter cup servings. Nutrition info is based on the 3/4 cup serving size.

    Used this recipe minus the tomato plus chopped onion and chopped serrano pepper with excellent results. I did dice the carrot rather than grate it because I have a quick dicer and simmered about 1/2 the time. I served the tomatoes sliced on the side with cheese quesadillas.
