Fajita Nachos

Ingredients
2 T EVOO1 pound ground sirloin or chicken1 red bell pepper, seeded and chopped1 red onion, chopped3-4 garlic cloves, chopped2 T chopped fresh thyme1 T ground cumin1 T ground corriandersalt and pepper3/4 C beer1- 9 oz bag or flax seed or whole grain tortilla chips2 C shredded monterey jack cheese2 ripe plum tomatoes, cut into small cubes1/3 C cilantro or flat leaf parsley leaves2 lime wedges
Directions
In a large skillet, heat EVOO, over medium heat. Add ground meat and cook, stirring, until browned, about 10 min. Add the bell pepper, onion, garlic, thyme, cumin, and corriander. cook until tender, about 5 min. Pour in the beer and cook.
Preheat the broiler. Arrange the chips on an ovenproof platter. Cover the chips with the meat, cheese, and jalapenos and broil until the cheese is melted. Top the nachos with the tomoatoes and cilantro; sqeeze the lime wedges over the nachos.
